Is there ever a bad day for Mexican food? Not in my house.
I have an upcoming trip to Mexico, and I love Love LOVE Mexican food. So when this cookbook came into my radar, I knew it was a must-have.
And it hasn’t disappointed!
The author Edgar Castrejón is a first-generation Mexican who went vegan while in college. He wanted to create a cookbook that would make the foods he grew up with just a little bit healthier.
What I love about this cookbook is how simple the ingredient lists are. Chances are you have most of them right on your pantry shelf. These are recipes I’ll continue to cook for years to come because they fit right in with the Mexican dishes my family already loves. I bet you will too.
You gotta try it!
