The Cookbook Club’s April 2023 Cookbook

April 19, 2023

Are you ready to try plant-based cooking? What better way to do it than with a cookbook! As a plant-based eater, I’ve tried my fair share of cookbooks over the last thirty years. These are my favorites, the cookbooks I use every day.

I haven't always been this excited about good food. In fact, I was probably a lot like you, frequently tired of the boring meals I tried to create for my family. Then I had a wake-call ... three times ... and I started looking a whole lot closer at what it really means to be wellthy!

hey there!

What’s my favorite food? Mexican! If we head out to a restaurant, it’s usually one of our favorite Mexican restaurants. There’s just something about the food. (Maybe it’s the guacamole!)

(Or maybe it’s because I’m a Cinco de Mayo baby. 😉 )

In any case, our trip to Mexico inspired me to find another cookbook with roots from south of the border.

This month I’ve selected a new cookbook based on plant-based foods served in Cafe Gratitude and Gracias Madre in California. (Nope, haven’t been to either. But I will definitely look them up next time I’m in California.)

I love the freshness and the abundance in flavors. These cookbooks help you create street food that is meant to be shared. Instead of trying one recipe, you can make several salsas, combine a handful of sides, and you’ve got yourself a meal! ?(We’ve done it several times in my home.)

A couple of years ago, I tasted mexican-style street corn for the first time. (Where have you been hiding?!) I tried creating it on my own, but I’m already counting the days until I can try the recipe in this book. (Have to wait for fresh, organic sweet corn to show up at my farmer’s market.) But it looks so good! You had me at pumpkin seed parmesan! Yes, please.

If you have a sweet tooth, I highly recommend the fudge brownies with salted mezcal caramel sauce and cashew whipped cream. Here’s a hint – we actually liked the brownies better the next day. They were more fudgy. It also makes it easier if you’re using them for a dinner party.

If you give this cookbook a try, let me know. I’d love to hear what your favorite recipe is too!

About the GorgeousWellth Cookbook Club

Each month I select a cookbook for the month and use it as inspiration for dinner at least once a week. Each month I’ll choose a favorite I’m working with, and share a thing or two I learn.

Wanna play along? I’m keeping this pretty informal – I just want to inspire you to pick up a great cookbook and start cooking too. Hopefully, you can get a lot of these from your local library. If not, you might be able to pick them up gently used through Amazon. Or if you choose to use them for your inspiration as much as I do, maybe it’s time to invest in these and have them ready and waiting on your shelf.

I won’t be sharing the recipes, but I will share some of the results. Let me know if you try any of these, and let me know what you think. Be sure to tag me on IG @loriosterberg or use #GorgeousWellth Follow along as I’ll be adding new cookbooks each month!

Happy plant-based cooking!

Steal My Own Wellthy Plan!

“I want to go plant-based, but I lose willpower.”
“I want to go plant-based, but I hate cooking.”
“I want to go plant-based, but I simply don’t have the time.”

Let’s move past those excuses, shall we? Health is the one thing we all seem to take for granted … until we have a problem. In midlife, we often receive a wakeup call that leads to wanting to do more to change.

That’s what this course is about. It's a free, 7 day email course designed to help you explore your mind/body connection to wellness. To Unleash Foundational Wellness. Plant-based style.

I believe it's our destiny to leave the world a better place then we found it.
