What’s my favorite food? Mexican! If we head out to a restaurant, it’s usually one of our favorite Mexican restaurants. There’s just something about the food. (Maybe it’s the guacamole!)
(Or maybe it’s because I’m a Cinco de Mayo baby. 😉 )
In any case, our trip to Mexico inspired me to find another cookbook with roots from south of the border.
This month I’ve selected a new cookbook based on plant-based foods served in Cafe Gratitude and Gracias Madre in California. (Nope, haven’t been to either. But I will definitely look them up next time I’m in California.)
I love the freshness and the abundance in flavors. These cookbooks help you create street food that is meant to be shared. Instead of trying one recipe, you can make several salsas, combine a handful of sides, and you’ve got yourself a meal! ?(We’ve done it several times in my home.)
A couple of years ago, I tasted mexican-style street corn for the first time. (Where have you been hiding?!) I tried creating it on my own, but I’m already counting the days until I can try the recipe in this book. (Have to wait for fresh, organic sweet corn to show up at my farmer’s market.) But it looks so good! You had me at pumpkin seed parmesan! Yes, please.
If you have a sweet tooth, I highly recommend the fudge brownies with salted mezcal caramel sauce and cashew whipped cream. Here’s a hint – we actually liked the brownies better the next day. They were more fudgy. It also makes it easier if you’re using them for a dinner party.
